Malt from the ground up - one batch at a time
Our Story
Ted Hawley is a fourth-generation farmer and first-generation modern maltster. And it’s that early-to-rise, hands-in-the-dirt work ethic that drives New York Craft Malt. Established in 2012, Ted studied first - in 2012 and 2013 - under Dr. Yusehu Li at the Canadian Malting Barley Technical Centre and, later, with Kai Kruschhausen and Dr. Tobias Lohmuller at Germany’s Buhler Barth Grain Roasting Training. Ted travels extensively, speaking at malting and grain conferences throughout the United States; additionally, as the North American sales and service representative for Ying Tai Machinery Company, Ltd. Roasting Systems, Ted consults in the US and Canada to help malthouses build their brand by expanding into large scale roasting malt and grains with commercial roasting systems.
Reinventing our family farm & finding a better way
I knew that scattering grain on a floor and waiting for it to chit wouldn’t satisfy my restless character so I set out to find a better way. For me, pneumatic malting provides the perfect environment - free from the vagaries of day-to-day atmosphereic (and microbial) changes common to traditional floor malted products. But, in 2012, there were few affordable options for pneumatic malting systems. So I designed my own. Found someone to build the thing. And I haven’t looked back.
A few years later I added a drum roaster capable of roasting up to 400 pounds of grain at a a time, followed by a steam-flaking system which allows us to create steam flaked grains that rival commodity flakes.
Beer tastes better when it’s local. It tastes better when it’s been touched by callused hands that grew the grain, malted it, shoveled it into sacks and delivered it to other hands, also likely rough and callused, that turn it into delicious beer and spirits. The alchemy of the grower, the maltster, and brewer complete the the circle: from ground, to grain, to glass. It’s why we say that New York Craft Malt is “A Splendid Malt.”
Our goal is to assist brewers and distillers in creating award-winning beer, one glass at a time.

"We released our 10 year anniversary beer, an Old Home Distillers Brother's Cut Bourbon Barrel Aged Dark Strong Ale. It was about 85% NYCM malts! Easily one of the top five beers I've brewed in my career, and hands down the best barrel-aged beer. I just wanted to say a quick thank you. I really appreciate how quickly you got the order out (it made a huge difference for me this time, as some unexpected problems came up elsewhere on the farm). Additionally, I wanted to thank you specifically for how carefully and well your pallets are stacked. It is incredibly helpful that you stack them with the product stickers facing out, it saves me a lot of time when I bring everything into inventory. Being able to quickly and easily check lot codes and get everything recorded with very little friction is invaluable. It's a little thing, but it really makes a big difference to me."
